Curried Lentils with Roasted Veggies

Ingredients

1 cup dried green, brown, or French lentils
2 cups water
1 head broccoli, chop heads from stem
2 cups green beans, chopped in half
1 sweet potato, sliced
2 carrots, sliced
2 TBSP Curry Powder

Directions

Preheat oven to 350 degrees Fahrenheit

Put veggies on a cooking sheet and add coconut or olive oil

Bring water to a boil and add 1 cup of lentils. When lentils are cooked, drain the water, put back into pot and add curry powder.

When everything is done, put it on a plate, and eat up!
